MANY FLAVORS OF WINE



The four main flavors of wine are sweet, salty, sour, and bitter. While this is the four flavors your tongue is really capable of tasting, the long lasting impression that wine leaves in your mouth is far more complex. When drinking or tasting wine, your taste buds and your sense of smell are involved, adding to the way you construe wine overall. The flavors, aromas, and sensations that wine is comprised of provide the interaction that you taste when you sample wine.

Sweetness is an element that wines are well known for. Usually with most types of wine, grapes are responsible for the sweet taste. Grapes do contain a lot of sugar, which helps breaks the yeast down into alcohol. The grapes and yeast that were used to make the wine will leave behind various sugars, which your tongue will be able to quickly distinguish. As soon as your tongue detects these various sugars, the stimulation of sweetness from the wine will be ever so present in your mouth.

Even though your tongue doesn't really know how to decipher the taste of alcohol, it is always present in wines. The alcohol present in wine will dilate blood vessels and hence intensify all of the other flavors found in the wine. After you have sampled a few types of wine, the alcohol level can easily have an effect on your taste buds, making it much more difficult to distinguish other drinks that you may have.

Acidity in wines usually influences the sugar. When the acidity is balanced, the overall flavor of wine can be very overwhelming. After you drink wine that contains it, the flavor of the acidity will be well known to your tongue. Notwithstanding that acidity is great with wine, but too much of it will leave a very sharp taste. At the right levels, acidity will bring the flavors of the grape and fruits alive in your mouth - providing you with the perfect taste.


Another effect of flavor is tannins, which are the proteins present in the skins of grapes and other fruits. A wine that has the right amount of tannins will give your tongue a great feel, and bring in the sensations of the other flavors. During wine aging process, the tannins will begin to breakdown in the bottle, giving you a softer feel to the taste. Tannins are definitely essential for the taste of wine - providing the wine has been properly aged.

Oak is the last flavor associated with wine. Even though oak isn't put into the wine during the creation process, it is actually transferred during the aging process, as most wines will spend quite a bit of time in oak barrels. Depending on how long the wine is left in the oak barrel, the ability to extract the flavor will vary. Quite often, wine will be aged just enough to where the oak taste is visibly there - and adds the perfect sentiment to the taste.

There are many other factors involved to determine the flavors of wine, the most prominent ones are those listed above. The above flavors are the most present in wine, and also the flavors that you need to get more proficient with. Before trying to taste wine or distinguish flavors, you should always learn as much you can about the ingredients accountable for the flavors. When you follow these simple rules you will know more about what wine you taste, because you will be in a better position to appreciate wine.

A "Dessert" is a meal course that usually comes after dinner. Most often Dessert foods are of sweet food but can also be of a strongly flavored food, such as cheese, like cheese cake. The world dessert comes from the Old French word "desservir", which means 'to clear the table'. Often times in the English language dessert is confused with the word desert(note only one "s"), which is a barren piece of land normally with sand as soil.

It wasn't until after the 19th-century where the rise of the middle class, and the mechanization of the sugar industry, brought the privilege of sweets into the general public and unreserved it exclusively for the aristocracy, or as rare holiday treat. This was because sugar became cheaper and more readily available to the general public. As sugar was widely spread, so was the development and popularity of desserts.

In today's culture dessert recipes have become a popular item for discussion, as they are a winning way to win people over at the end of any meal. This is partly because if you serve a mediocre meal, with an excellent dessert, people will remember you for the dessert and forget about the meal.

Most cultures, have a separate final distinction between the main course, and the sweet course. This is not true however in some cultures such as Chinese, who will mix in sweet and savoury dishes throughout the entire meal. Dessert is, often times seen as a separate meal or snack, rather than a course, and can be eaten some time after the meal by many individuals. The temperature creates the frozen water crystals, which are fermented along with sugars and the particles that are found in the free running juices. Through this process, the wonderful and rare ice wine is created.

If you have been looking to try ice wine, finding it may be very difficult. As you probably already know, most alcohol and wine stores don’t sell this rare wine. Finding it online is very hard to do as well, unless you catch it at the right time. Even then, if you are able to find it, it can easily cost you hundreds of thousands of dollars for a single bottle.

The first operation performed on grapes after they are removed from their storage is to de-stem them, which is the process of removing the grape from the shoots to which they are attached.
As soon as all the grapes in the batch are de-stemmed, they are placed into the wine press where they are compressed into a paste which in turn releases the must (the juice of the fruit). The resulting paste (or pomace) and must combination then spend time together in a cask and it is the length of time that the mixture sits with the must in contact with the grape skin and pulp that determines the character of the finished wine.

When the winemaker determines the right amount of time has passed, the juice is drawn off and yeast added to begin the fermentation process with the remaining pomace, in many cases, being returned to the vineyard to be used as a fertilizer.

Once the colour and sugar content are correct the cask valve is opened and the first juice, which is the best quality wine, is then transferred into other containers where the fermentation process is finalized.

‘Pressed wines’, which are full of tannin, are made from the leftover solids. They have a strong colour and are generally mixed with the first juice in many different ways to create wines of different strengths and flavours.

When the fermentation process is complete, the wine is either bottled straight away, or left to age.

BARRACK OBAMA LEAVES NY SERVER WITH 52% TIP


Everytime i go into a restaurant,i try my best to tip anyone who serves me but the truth is that i do the math in my head before tipping.President Obama stunned me by leaving a New York server with 52% tip.

TMZ reports:

The leader of the free world President Barack Obama has done something only great men do ... he tipped his server ON TOP of already added gratuity. He DOUBLE TIPPED!

Obama stopped for lunch in Rochester, NY Thursday at a little deli called Magnolia's. It was widely reported that the Prez ate a grilled cheese and some cream of tomato soup. Big stuff.

But what you didn't know ... Obama not only bought lunch for his secret service men (the ones who checked the place for WMD's before hand) ... he also double tipped his waiter, like a champ.

TMZ obtained a copy of the receipt ... his total bill for 9 people was $89.84. The restaurant added a 20% tip for the large party -- $16.64 -- but Obama felt more needed to be done. He gave an additional $30.

In total, B.O. left a 52% tip.

A Brief History of Pizza: The Dish that Conquered the World


Pizza, the way we know it today, is a derivation from focaccia (from the Latin word for fire), flat bread that has been prepared since antiquity in different forms and garnished with herbs, olives, fat, raisin, honey, and nuts.

The word pizza in Italian identifies any type of flat bread or pie—fried or baked. Although you’d find many types of pitas or pizzas around the Mediterranean, it is in Naples that pizza in the form we know it today first emerged, after the tomato appeared on the table in the 1700s. Naples has many records of pizza since around the year 1000; the first mentions call these flat breads laganae, and later they are referred to as picea. In those times, pizzas were dressed with garlic and olive oil, or cheese and anchovies, or small local fish. They were baked on the open fire and sometimes were closed in two, as a book, to form a calzone.

 In Naples is also where the first pizzerias opened up, with brick wood-burning oven, covered with lava stones from the Mount Vesuvius. The chefs of those times ignored pizza because was considered a poor people’s food, but the new combination with the tomato, when it entered the kitchen around the 1770s, must have raised some curiosity, even in the royal palace. Ferdinand I Bourbon, King of Naples, loved the simple food of the people and went to taste the pizzas made in the shop of Antonio Testa. He liked it so much that he wanted pizza to be included in the menu at the court. He failed after the opposition of his wife, Queen Maria Carolina. His son Ferdinand II also liked all kind of popular food and he loved pizza to the point that he hired Domenico Testa, son of the now famous Antonio, to build a pizza oven in the royal palace of Capodimonte.

Pizza became very popular, earning its place in Neapolitan folklore. Simple and economical, it turned into the food for all people, even sold on the streets, as shown in many illustrations of the time.

A famous episode extended the popularity of pizza beyond the limits of the city of Naples. It was 1889, and Margherita, queen of Italy, was visiting the city. She was told about pizza and wanted to taste it. A famous cook by the name of Don Raffaele, helped by his wife Donna Rosa, was invited to cook pizza at the royal palace. They prepared three pizzas, typical of that time: one with cheese and basil; one with garlic, oil, and tomato; and one with mozzarella, basil, and tomato. The queen, impressed by the colors of the last pizza, which resembled the national flag, preferred that one. Since then this pizza is known as Pizza Margherita, and Don Raffaele is credited with its invention, even if we know that it already existed for a long time.

At the beginning of the last century, with Italian immigrants, the first pizzerias appeared also in the United States, where pizza has become a mass phenomenon. Yet, even today the best pizza is found in Naples, where it is rigorously made with buffalo mozzarella. Superior pizzas are considered those obtained by moderate variations of the simplest and most popular: Pizza Napoletana with tomato, garlic, oil, and oregano; Pizza Margherita; Pizza Marinara with tomato, anchovies, capers, and olives; and Pizza Four Seasons, divided in four quadrants, each dressed in a different way. Pizza with hot salami, the American pepperoni pizza, is instead found in the Calabria region south of Naples, where this type of hot sausage is produced.


A BRIEF HISTORY OF ESPRESSO

Luigi Bezzera, the owner of a manufacturing business invented Espresso at the turn of the century.  Luigi Bezzera was simply trying to figure out a way to brew coffee faster.  He figured if he could just add pressure to the brewing process it would speed things up.  Thus the "Fast Coffee Machine" was created.  His idea of a fast cup of coffee turned out much better than he had planned, what he ended up with is a better, fuller tasting cup of strong coffee, as well as a much faster process.  He found that the quicker more efficient brewing method allowed for the quality of the beans to be extracted as opposed to over extracting he had previously experienced.  The term "Espresso" means fast in italian, hence the term.

It wasn't until later when Desidero Pavoni purchased the rights from Mr. Bezzera for the espresso machine that it became popular.  Pavoni was extremely successful in marketing the product and probably changed the way people drink coffee from then on.  Just look around!  Coffee and Espresso shops are popping up everywhere, even in the U.S. it has become not only popular for the delicious beans, but has given us a new place to socialize.
